- Veal mince - 300 grams
- Fresh parsley - 15 grams, chopped
- Fresh thyme - 5 grams, chopped
- Fresh rosemary - 5 grams, chopped
- Garlic - 1 clove, minced
- Egg - 1 large
- Almond flour - 30 grams
- Salt - 5 grams
- Black pepper - 2 grams
- Olive oil - 15 ml
- Butter - 15 grams
- Mixed salad greens - 100 grams
- Cherry tomatoes - 100 grams, halved
- Avocado - 1 medium, sliced
Steps
- In a mixing bowl, combine the veal mince, chopped parsley, thyme, rosemary, minced garlic, egg, almond flour, salt, and black pepper. Mix well until all ingredients are evenly combined.
- Form the mixture into two equal-sized burger patties. Make sure they are compact to hold together during cooking.
- Heat olive oil in a skillet over medium heat. Add the burger patties and cook for about 5-6 minutes on each side, or until they reach an internal temperature of 70°C (160°F) and are golden brown.
- While the burgers are cooking, melt butter in a separate pan over low heat. Add the mixed salad greens and sauté lightly for about 2-3 minutes until just wilted.
- To serve, place each burger on a plate, top with sautéed greens, and garnish with sliced avocado and halved cherry tomatoes.
