  • egg - 1 large
  • Dijon mustard - 1 tablespoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • olive oil - 1 tablespoon
  • avocado - 1 small, sliced
  • tomato - 1 medium, sliced
  • leafy greens (e.g., arugula or spinach) - 1 cup

Steps

  1. In a mixing bowl, combine the veal mince, chopped parsley, thyme, minced garlic, chopped shallot, egg, Dijon mustard, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
  2. Divide the mixture into two equal portions and shape them into burger patties.
