Ingredients

  • Large ripe tomatoes - 2
  • Fresh basil - 15 grams
  • Garlic - 1 clove
  • Breadcrumbs - 50 grams
  • Grated Parmesan cheese - 30 grams
  • Egg - 1
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Brioche buns - 2
  • Mixed salad greens - 50 grams
  • Mayonnaise - 2 tablespoons
  • Lemon juice - 1 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the tomatoes in half and place them cut-side up on a baking sheet. Drizzle with 1 tablespoon of olive oil, and season with salt and pepper. Roast in the oven for 15-20 minutes until soft.
  3. In a mixing bowl, combine the roasted tomatoes, chopped basil, minced garlic, breadcrumbs, grated Parmesan cheese, and egg. Mash together until well combined and form into two patties.
  4. In a skillet, heat the remaining tablespoon of olive oil over medium heat. Cook the tomato patties for about 4-5 minutes on each side until golden brown.
  5. While the patties are cooking, prepare the garlic aioli by mixing the mayonnaise with lemon juice and minced garlic in a small bowl.
  6. To assemble the burgers, spread the garlic aioli on the bottom half of each brioche bun, place a tomato patty on top, and add mixed salad greens. Top with the other half of the bun.
  7. Serve immediately and enjoy your Burger de Tomate!
