Ingredients

  • Tempeh - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red onion - 1 small, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Dijon mustard - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Smoked paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Whole wheat burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1 medium, sliced
  • Cucumber - 1/2, sliced
  • Vegan mayonnaise - 3 tablespoons
  • Lemon juice - 1 teaspoon

Steps

  1. Begin by crumbling the tempeh into a mixing bowl.
  2. In a pan, heat 1 tablespoon of olive oil over medium heat and sauté the minced garlic and chopped red onion until translucent, about 5 minutes.
  3. Add the sautéed garlic and onion to the crumbled tempeh along with chopped parsley, Dijon mustard, soy sauce, smoked paprika, and black pepper. Mix well until combined.
  4. Form the mixture into two equal patties and refrigerate for about 15 minutes to firm up.
  5. While the patties are chilling, prepare the vegan aioli by mixing vegan mayonnaise and lemon juice in a small bowl. Set aside.
  6. In the same pan, add the remaining tablespoon of olive oil and cook the tempeh patties over medium heat for about 4-5 minutes on each side until golden brown.
  7. To assemble, spread the vegan aioli on the burger buns, layer with lettuce, place the tempeh patty, and top with slices of tomato and cucumber.
  8. Serve immediately and enjoy your Burger de Tempeh!
