- Cooked rice - 200 grams
- Chickpeas - 100 grams, canned and drained
- Carrot - 1 medium, grated
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Chia seeds - 1 tablespoon
- Water - 3 tablespoons (for chia seed gel)
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Whole grain burger buns - 2
- Lettuce leaves - 2
- Tomato - 1 medium, sliced
- Cucumber - 1/2 medium, sliced
- Vegan mayonnaise - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- In a small bowl, mix chia seeds with water and let it sit for 10 minutes to form a gel.
- In a large bowl, combine the cooked rice, chickpeas, grated carrot, chopped onion, minced garlic, chopped parsley, chia seed gel, salt, black pepper, and paprika. Mash together until well combined but still slightly chunky.
- Form the mixture into two patties and refrigerate for 10 minutes to firm up.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, until golden brown and heated through.
- While the patties are cooking, prepare the vegan aioli by mixing vegan mayonnaise with lemon juice in a small bowl.
- To assemble the burgers, spread the aioli on the bottom half of the burger buns, place a lettuce leaf, followed by the cooked rice patty, sliced tomato, and cucumber. Top with the other half of the bun.
