Ingredients

  • Zucchini - 100 grams
  • Eggplant - 100 grams
  • Bell pepper (red or yellow) - 100 grams
  • Tomato - 100 grams
  • Onion - 50 grams
  • Garlic - 2 cloves
  • Chickpeas (cooked) - 200 grams
  • Breadcrumbs - 50 grams
  • Fresh basil - 10 grams
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Pepper - to taste
  • Burger buns - 2 pieces
  • Lettuce leaves - 2 pieces
  • Sliced cheese (optional) - 2 slices

Steps

  1. 1. Dice the zucchini, eggplant, bell pepper, and tomato into small cubes. Finely chop the onion and garlic.
  2. 2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the onion and garlic, and sauté until translucent.
  3. 3. Add the diced zucchini, eggplant, and bell pepper to the skillet. Cook for about 5-7 minutes until they are tender. Stir in the tomato and season with salt and pepper. Cook for another 2 minutes. Remove from heat and let cool slightly.
  4. 4. In a mixing bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth but still a little chunky.
  5. 5. Add the sautéed vegetables and chopped fresh basil to the mashed chickpeas. Mix well and then add breadcrumbs to help bind the mixture. Adjust seasoning if necessary.
  6. 6. Form the mixture into 2 patties. Heat the remaining tablespoon of olive oil in the skillet over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown.
  7. 7. Toast the burger buns lightly in the same skillet or a toaster.
  8. 8. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the ratatouille patty, and a slice of cheese if desired. Top with the other half of the bun and serve immediately.
