- Tomato - 100 grams
- Onion - 50 grams
- Garlic - 2 cloves
- Chickpeas (cooked) - 200 grams

- Fresh basil - 10 grams
- Olive oil - 2 tablespoons
- Salt - to taste
- Pepper - to taste
- Burger buns - 2 pieces
- Lettuce leaves - 2 pieces
- Sliced cheese (optional) - 2 slices
Steps
- 1. Dice the zucchini, eggplant, bell pepper, and tomato into small cubes. Finely chop the onion and garlic.
- 2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the onion and garlic, and sauté until translucent.
- 3. Add the diced zucchini, eggplant, and bell pepper to the skillet. Cook for about 5-7 minutes until they are tender. Stir in the tomato and season with salt and pepper. Cook for another 2 minutes. Remove from heat and let cool slightly.
- 4. In a mixing bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth but still a little chunky.
- 5. Add the sautéed vegetables and chopped fresh basil to the mashed chickpeas. Mix well and then add breadcrumbs to help bind the mixture. Adjust seasoning if necessary.
- 6. Form the mixture into 2 patties. Heat the remaining tablespoon of olive oil in the skillet over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown.
- 7. Toast the burger buns lightly in the same skillet or a toaster.
- 8. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the ratatouille patty, and a slice of cheese if desired. Top with the other half of the bun and serve immediately.
