- Quinoa - 100 grams
- Water - 250 milliliters
- Carrot - 1 medium, grated
- Zucchini - 1 small, grated
- Red bell pepper - 1/2, finely chopped
- Onion - 1 small, finely chopped
- Garlic - 1 clove, minced
- Fresh parsley - 2 tablespoons, chopped
- Chickpea flour - 50 grams
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cumin - 1/2 teaspoon
- Paprika - 1/2 teaspoon

- Lettuce leaves - 2
- Tomato - 1, sliced
- Avocado - 1/2, sliced
Steps
- Rinse the quinoa under cold water and then combine it with 250 milliliters of water in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until all the water is absorbed.
- In a large bowl, combine the cooked quinoa, grated carrot, grated zucchini, chopped red bell pepper, chopped onion, minced garlic, and chopped parsley.
- Add chickpea flour, salt, black pepper, cumin, and paprika to the vegetable mixture. Mix until well combined, then form the mixture into two patties.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side or until golden brown and crispy.
- While the patties are cooking, prepare the sauce by mixing 1 tablespoon of olive oil with salt, pepper, and any herbs of your choice.
- To assemble the burgers, place each patty on a bun, top with lettuce, tomato slices, avocado, and drizzle the sauce over it. Serve immediately.
