Ingredients

  • Quinoa - 100 grams
  • Water - 250 milliliters
  • Carrot - 1 medium, grated
  • Zucchini - 1 small, grated
  • Red bell pepper - 1/2, finely chopped
  • Onion - 1 small, finely chopped
  • Garlic - 1 clove, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Chickpea flour - 50 grams
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cumin - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Avocado - 1/2, sliced

Steps

  1. Rinse the quinoa under cold water and then combine it with 250 milliliters of water in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until all the water is absorbed.
  2. In a large bowl, combine the cooked quinoa, grated carrot, grated zucchini, chopped red bell pepper, chopped onion, minced garlic, and chopped parsley.
  3. Add chickpea flour, salt, black pepper, cumin, and paprika to the vegetable mixture. Mix until well combined, then form the mixture into two patties.
  4. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side or until golden brown and crispy.
  5. While the patties are cooking, prepare the sauce by mixing 1 tablespoon of olive oil with salt, pepper, and any herbs of your choice.
  6. To assemble the burgers, place each patty on a bun, top with lettuce, tomato slices, avocado, and drizzle the sauce over it. Serve immediately.
