Ingredients

  • Ground chicken - 400 grams
  • Garlic - 2 cloves, minced
  • Fresh thyme - 1 teaspoon, chopped
  • Fresh rosemary - 1 teaspoon, chopped
  • Dried oregano - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Zucchini - 1 medium, sliced into rounds
  • Bell pepper - 1 medium, sliced
  • Romaine lettuce leaves - 4 large (for wrapping)
  • Cherry tomatoes - 100 grams, halved
  • Feta cheese - 50 grams, crumbled
  • Balsamic vinegar - 1 tablespoon

Steps

  1. In a mixing bowl, combine the ground chicken, minced garlic, thyme, rosemary, oregano, salt, and black pepper. Mix until well incorporated.
  2. Form the chicken mixture into 2 patties, about 2-3 cm thick.
  3. Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the chicken patties for about 6-7 minutes on each side or until they are cooked through (internal temperature should reach 75°C).
  4. In the same skillet, add the sliced zucchini and bell pepper, and drizzle with the remaining tablespoon of olive oil. Sauté for about 5-6 minutes until tender.
  5. To assemble the burgers, place a chicken patty on a large romaine lettuce leaf, top with sautéed vegetables, halved cherry tomatoes, and crumbled feta cheese. Drizzle with balsamic vinegar.
  6. Wrap the lettuce around the burger and serve immediately.
