- Ground chicken - 400 grams
- Garlic - 2 cloves, minced
- Fresh thyme - 1 teaspoon, chopped
- Fresh rosemary - 1 teaspoon, chopped
- Dried oregano - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Zucchini - 1 medium, sliced into rounds
- Bell pepper - 1 medium, sliced
- Romaine lettuce leaves - 4 large (for wrapping)
- Cherry tomatoes - 100 grams, halved
- Feta cheese - 50 grams, crumbled
- Balsamic vinegar - 1 tablespoon
Steps
- In a mixing bowl, combine the ground chicken, minced garlic, thyme, rosemary, oregano, salt, and black pepper. Mix until well incorporated.
- Form the chicken mixture into 2 patties, about 2-3 cm thick.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the chicken patties for about 6-7 minutes on each side or until they are cooked through (internal temperature should reach 75°C).
- In the same skillet, add the sliced zucchini and bell pepper, and drizzle with the remaining tablespoon of olive oil. Sauté for about 5-6 minutes until tender.
- To assemble the burgers, place a chicken patty on a large romaine lettuce leaf, top with sautéed vegetables, halved cherry tomatoes, and crumbled feta cheese. Drizzle with balsamic vinegar.
- Wrap the lettuce around the burger and serve immediately.
