- Potatoes - 400 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Egg - 1 large
- All-purpose flour - 50 grams
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Olive oil - 3 tablespoons
- Burger buns - 2, preferably whole grain
- Lettuce leaves - 2
- Tomato - 1, sliced
- Cheese (optional, such as Gruyère) - 2 slices
Steps
- Peel and cut the potatoes into chunks, then boil them in salted water for about 15 minutes or until tender. Drain and mash them in a bowl.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent, about 5 minutes. Let it cool slightly.
- Add the cooked onion and garlic mixture to the mashed potatoes along with chopped parsley, egg, flour, salt, black pepper, and paprika. Mix well until combined.
- Form the potato mixture into two patties, about 1.5 cm thick.
- In the same skillet, heat the remaining olive oil over medium heat. Cook the potato patties for about 4-5 minutes on each side or until golden brown and crispy.
- While the patties are cooking, toast the burger buns in a separate pan or oven until lightly golden.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by a potato patty, a slice of tomato, and cheese if using. Top with the other half of the bun.
- Serve warm with your choice of condiments.
