Ingredients

  • Potatoes - 400 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Egg - 1 large
  • All-purpose flour - 50 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Olive oil - 3 tablespoons
  • Burger buns - 2, preferably whole grain
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Cheese (optional, such as Gruyère) - 2 slices

Steps

  1. Peel and cut the potatoes into chunks, then boil them in salted water for about 15 minutes or until tender. Drain and mash them in a bowl.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent, about 5 minutes. Let it cool slightly.
  3. Add the cooked onion and garlic mixture to the mashed potatoes along with chopped parsley, egg, flour, salt, black pepper, and paprika. Mix well until combined.
  4. Form the potato mixture into two patties, about 1.5 cm thick.
  5. In the same skillet, heat the remaining olive oil over medium heat. Cook the potato patties for about 4-5 minutes on each side or until golden brown and crispy.
  6. While the patties are cooking, toast the burger buns in a separate pan or oven until lightly golden.
  7. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by a potato patty, a slice of tomato, and cheese if using. Top with the other half of the bun.
  8. Serve warm with your choice of condiments.
