Burger de Polenta

Ingredients
- Polenta - 150 grams
- Vegetable broth - 500 ml
- Parmesan cheese, grated - 30 grams
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Red onion, thinly sliced - 1 small
- Zucchini, grated - 100 grams
- Cherry tomatoes, halved - 100 grams
- Fresh basil, chopped - 2 tablespoons
- Lemon juice - 1 tablespoon
- Whole grain burger buns - 2
- Mixed salad greens - 50 grams
Steps
- In a pot, bring the vegetable broth to a boil. Gradually whisk in the polenta, stirring continuously until it thickens and pulls away from the sides of the pot, about 5-7 minutes.
- Remove from heat and stir in the grated Parmesan cheese, salt, and black pepper. Pour the polenta into a greased baking dish and spread it evenly. Allow it to cool and set for at least 20 minutes.
- Once the polenta is firm, cut it into two burger-sized patties. Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the patties for 3-4 minutes on each side until golden and crispy.
- In the same skillet, add the remaining olive oil and sauté the sliced red onion and grated zucchini for about 5 minutes until softened.
- In a small bowl, mix together the cherry tomatoes, chopped basil, and lemon juice to create a fresh topping.
- To assemble the burgers, place a polenta patty on the bottom half of each burger bun, top with the sautéed vegetables, the cherry tomato and basil mixture, and a handful of mixed salad greens. Close the burgers with the top half of the buns.
- Serve immediately with a side of your choice.
