Ingredients

  • Red bell pepper - 1 large
  • Yellow bell pepper - 1 large
  • Chickpeas - 200 grams (cooked)
  • Breadcrumbs - 50 grams
  • Garlic - 1 clove, minced
  • Onion - 1 small, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Mayonnaise - 2 tablespoons (optional)

Steps

  1. Preheat the oven to 200°C (390°F).
  2. Cut the bell peppers in half, remove seeds, and place them cut-side down on a baking tray.
  3. Roast the peppers in the preheated oven for 20-25 minutes until the skins are blistered and slightly charred.
  4. While the peppers are roasting, in a medium bowl, mash the cooked chickpeas with a fork until mostly smooth.
  5. Add the breadcrumbs, minced garlic, chopped onion, parsley, cumin, salt, and black pepper to the chickpeas. Mix until well combined.
  6. Form the chickpea mixture into two patties.
  7. Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown.
  8. Once the peppers are roasted, remove them from the oven and let them cool slightly. Peel off the skins and cut them into strips.
  9. To assemble the burgers, place a lettuce leaf on the bottom half of each burger bun, add the cooked chickpea patty, top with roasted bell pepper strips, a slice of tomato, and mayonnaise if desired.
  10. Cover with the top half of the bun and serve immediately.
