- Red bell pepper - 1 large
- Yellow bell pepper - 1 large
- Chickpeas - 200 grams (cooked)
- Breadcrumbs - 50 grams
- Garlic - 1 clove, minced
- Onion - 1 small, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Cumin powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Mayonnaise - 2 tablespoons (optional)
Steps
- Preheat the oven to 200°C (390°F).
- Cut the bell peppers in half, remove seeds, and place them cut-side down on a baking tray.
- Roast the peppers in the preheated oven for 20-25 minutes until the skins are blistered and slightly charred.
- While the peppers are roasting, in a medium bowl, mash the cooked chickpeas with a fork until mostly smooth.
- Add the breadcrumbs, minced garlic, chopped onion, parsley, cumin, salt, and black pepper to the chickpeas. Mix until well combined.
- Form the chickpea mixture into two patties.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown.
- Once the peppers are roasted, remove them from the oven and let them cool slightly. Peel off the skins and cut them into strips.
- To assemble the burgers, place a lettuce leaf on the bottom half of each burger bun, add the cooked chickpea patty, top with roasted bell pepper strips, a slice of tomato, and mayonnaise if desired.
- Cover with the top half of the bun and serve immediately.
