Ingredients

  • Cod fillet - 200 grams
  • Shrimp, peeled and deveined - 100 grams
  • Panko breadcrumbs - 50 grams
  • Egg - 1 large
  • Fresh dill, chopped - 2 tablespoons
  • Lemon zest - 1 teaspoon
  • Garlic, minced - 1 clove
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole wheat burger buns - 2
  • Lettuce leaves - 2
  • Tomato, sliced - 1 medium
  • Red onion, thinly sliced - 1/4 medium
  • Olive oil - 1 tablespoon
  • Lemon juice - 1 tablespoon

Steps

  1. In a food processor, combine the cod fillet and shrimp. Pulse until finely chopped but not pureed.
  2. In a bowl, mix the chopped fish, panko breadcrumbs, egg, dill, lemon zest, garlic, salt, and pepper until well combined.
  3. Form the mixture into two patties, about 1.5 cm thick. Place them on a plate and refrigerate for 10 minutes to firm up.
  4. Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side or until golden brown and cooked through.
  5. While the patties are cooking, prepare the sauce by mixing lemon juice with a pinch of salt and pepper in a small bowl.
  6. Toast the whole wheat burger buns lightly. Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by the fish patty, tomato slices, red onion, and a drizzle of the lemon sauce.
  7. Top with the other half of the bun and serve immediately.
