- Cod fillet - 200 grams
- Shrimp, peeled and deveined - 100 grams
- Panko breadcrumbs - 50 grams
- Egg - 1 large
- Fresh dill, chopped - 2 tablespoons
- Lemon zest - 1 teaspoon
- Garlic, minced - 1 clove
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Whole wheat burger buns - 2
- Lettuce leaves - 2
- Tomato, sliced - 1 medium
- Red onion, thinly sliced - 1/4 medium
- Olive oil - 1 tablespoon
- Lemon juice - 1 tablespoon
Steps
- In a food processor, combine the cod fillet and shrimp. Pulse until finely chopped but not pureed.
- In a bowl, mix the chopped fish, panko breadcrumbs, egg, dill, lemon zest, garlic, salt, and pepper until well combined.
- Form the mixture into two patties, about 1.5 cm thick. Place them on a plate and refrigerate for 10 minutes to firm up.
- Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side or until golden brown and cooked through.
- While the patties are cooking, prepare the sauce by mixing lemon juice with a pinch of salt and pepper in a small bowl.
- Toast the whole wheat burger buns lightly. Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by the fish patty, tomato slices, red onion, and a drizzle of the lemon sauce.
- Top with the other half of the bun and serve immediately.
