Ingredients

  • Leeks - 200 grams, finely sliced
  • Chickpeas - 200 grams, cooked and drained
  • Oats - 50 grams, rolled
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Nutritional yeast - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Ground black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Whole wheat burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Vegan mayonnaise - 2 tablespoons

Steps

  1. In a skillet, heat the olive oil over medium heat and sauté the sliced leeks until soft and translucent, about 5-7 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. In a mixing bowl, combine the cooked chickpeas, sautéed leeks and garlic, rolled oats, nutritional yeast, parsley, cumin, salt, and pepper.
  4. Mash the mixture with a fork or potato masher until well combined but still slightly chunky.
  5. Form the mixture into two patties, each about 1.5 cm thick.
  6. Heat a non-stick skillet over medium heat and cook the patties for about 5 minutes on each side, or until golden brown.
  7. While the patties are cooking, toast the whole wheat burger buns until lightly browned.
  8. Assemble the burgers by spreading vegan mayonnaise on each bun, adding lettuce, the leek patties, and tomato slices.
  9. Serve immediately and enjoy your Burger de Poireaux!
