Ingredients
- Leeks - 200 grams, finely sliced
- Chickpeas - 200 grams, cooked and drained
- Oats - 50 grams, rolled
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Nutritional yeast - 2 tablespoons
- Olive oil - 1 tablespoon
- Ground cumin - 1 teaspoon
- Ground black pepper - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Whole wheat burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Vegan mayonnaise - 2 tablespoons
Steps
- In a skillet, heat the olive oil over medium heat and sauté the sliced leeks until soft and translucent, about 5-7 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- In a mixing bowl, combine the cooked chickpeas, sautéed leeks and garlic, rolled oats, nutritional yeast, parsley, cumin, salt, and pepper.
- Mash the mixture with a fork or potato masher until well combined but still slightly chunky.
- Form the mixture into two patties, each about 1.5 cm thick.
- Heat a non-stick skillet over medium heat and cook the patties for about 5 minutes on each side, or until golden brown.
- While the patties are cooking, toast the whole wheat burger buns until lightly browned.
- Assemble the burgers by spreading vegan mayonnaise on each bun, adding lettuce, the leek patties, and tomato slices.
- Serve immediately and enjoy your Burger de Poireaux!
