- Whole grain burger buns - 2 pieces

- Fresh thyme - 1 teaspoon, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Mixed salad greens - 100 grams
- Tomato - 1 medium, sliced
- Red onion - 1/2 small, thinly sliced
- Mustard - 1 tablespoon
- Avocado - 1/2, sliced
Steps
- Preheat a skillet over medium heat and add olive oil.
- Season the pigeon breasts with salt, black pepper, and chopped thyme.
- Sear the pigeon breasts in the skillet for 4-5 minutes on each side until cooked medium rare. Remove from heat and let rest for a few minutes.
- While the pigeon rests, slice the whole grain burger buns in half and lightly toast them in the skillet.
- Prepare the burger by spreading mustard on the bottom half of each bun.
- Layer the salad greens, followed by slices of tomato, red onion, and avocado on top of the mustard.
- Slice the pigeon breasts against the grain and place them on top of the vegetables.
- Top with the other half of the burger bun, secure with a toothpick if desired, and serve immediately.
