Ingredients

  • Brioche buns - 2
  • Pesto sauce - 4 tablespoons
  • Chickpeas, canned - 200 grams, drained and rinsed
  • Breadcrumbs - 50 grams
  • Grated Parmesan cheese - 30 grams
  • Egg - 1 large
  • Garlic clove - 1, minced
  • Spinach, fresh - 50 grams, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Tomato, sliced - 1 medium
  • Avocado, sliced - 1 small
  • Lettuce leaves - 4

Steps

  1. In a large bowl, mash the drained chickpeas with a fork until mostly smooth.
  2. Add the breadcrumbs, grated Parmesan, egg, minced garlic, chopped spinach, salt, and black pepper to the mashed chickpeas and mix until well combined.
  3. Form the mixture into two equal patties.
  4. Heat 1 tablespoon of olive oil in a skillet over medium heat and cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
  5. While the patties are cooking, toast the brioche buns in a separate pan until golden.
  6. Once toasted, spread 2 tablespoons of pesto sauce evenly on the bottom half of each bun.
  7. Place the cooked patties on top of the pesto-covered buns.
  8. Layer with sliced tomatoes, avocado, and lettuce leaves before placing the top half of the bun on each burger.
  9. Serve immediately and enjoy your Burger de Pesto!
