- Brioche buns - 2
- Pesto sauce - 4 tablespoons
- Chickpeas, canned - 200 grams, drained and rinsed
- Breadcrumbs - 50 grams
- Grated Parmesan cheese - 30 grams
- Egg - 1 large
- Garlic clove - 1, minced
- Spinach, fresh - 50 grams, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Tomato, sliced - 1 medium
- Avocado, sliced - 1 small
- Lettuce leaves - 4
Steps
- In a large bowl, mash the drained chickpeas with a fork until mostly smooth.
- Add the breadcrumbs, grated Parmesan, egg, minced garlic, chopped spinach, salt, and black pepper to the mashed chickpeas and mix until well combined.
- Form the mixture into two equal patties.
- Heat 1 tablespoon of olive oil in a skillet over medium heat and cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
- While the patties are cooking, toast the brioche buns in a separate pan until golden.
- Once toasted, spread 2 tablespoons of pesto sauce evenly on the bottom half of each bun.
- Place the cooked patties on top of the pesto-covered buns.
- Layer with sliced tomatoes, avocado, and lettuce leaves before placing the top half of the bun on each burger.
- Serve immediately and enjoy your Burger de Pesto!
