- Parsnips - 300 grams
- Chickpeas - 100 grams (cooked, drained)
- Garlic - 1 clove (minced)
- Fresh parsley - 2 tablespoons (chopped)
- Oats - 50 grams (ground to flour)
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Whole grain burger buns - 2
- Lettuce - 2 leaves
- Tomato - 1 (sliced)
- Avocado - 1/2 (sliced)
- Vegan mayonnaise - 2 tablespoons
Steps
- Preheat the oven to 200°C (390°F).
- Peel and chop the parsnips into small pieces, then toss them in a bowl with 1/2 tablespoon of olive oil, salt, and pepper.
- Spread the parsnips on a baking sheet and roast in the oven for 25-30 minutes until tender and slightly caramelized.
- In a food processor, combine the roasted parsnips, chickpeas, minced garlic, parsley, oats, cumin, and paprika. Blend until the mixture is well combined but still slightly chunky.
- Form the mixture into two equal-sized patties.
- Heat the remaining olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown.
- To assemble the burger, spread vegan mayonnaise on the burger buns, place a patty on each bun, and top with lettuce, tomato slices, and avocado.
