  • Parsnips - 300 grams
  • Chickpeas - 100 grams (cooked, drained)
  • Garlic - 1 clove (minced)
  • Fresh parsley - 2 tablespoons (chopped)
  • Oats - 50 grams (ground to flour)
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Whole grain burger buns - 2
  • Lettuce - 2 leaves
  • Tomato - 1 (sliced)
  • Avocado - 1/2 (sliced)
  • Vegan mayonnaise - 2 tablespoons

Steps

  1. Preheat the oven to 200°C (390°F).
  2. Peel and chop the parsnips into small pieces, then toss them in a bowl with 1/2 tablespoon of olive oil, salt, and pepper.
  3. Spread the parsnips on a baking sheet and roast in the oven for 25-30 minutes until tender and slightly caramelized.
  4. In a food processor, combine the roasted parsnips, chickpeas, minced garlic, parsley, oats, cumin, and paprika. Blend until the mixture is well combined but still slightly chunky.
  5. Form the mixture into two equal-sized patties.
  6. Heat the remaining olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown.
  7. To assemble the burger, spread vegan mayonnaise on the burger buns, place a patty on each bun, and top with lettuce, tomato slices, and avocado.
