Ingredients

  • Lean chicken liver - 200 grams
  • Shallot - 1 medium, finely chopped
  • Garlic - 1 clove, minced
  • Fresh thyme - 1 teaspoon, chopped
  • Fresh parsley - 1 tablespoon, chopped
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole grain burger buns - 2
  • Mixed greens (arugula, spinach) - 50 grams
  • Tomato - 1 medium, sliced
  • Cornichons - 30 grams, sliced (optional)

Steps

  1. In a skillet, heat olive oil over medium heat. Add the shallot and garlic, sauté until softened, about 3-4 minutes.
  2. Add the chicken liver to the skillet, season with salt, pepper, thyme, and parsley. Cook until the liver is browned on the outside, about 5-7 minutes.
  3. Remove the skillet from heat and let it cool slightly. Transfer the mixture to a food processor and blend until smooth. Adjust seasoning if necessary.
  4. Toast the whole grain burger buns lightly in a toaster or on a skillet.
  5. Spread a generous amount of the liver pâté on the bottom half of each bun.
  6. Top with mixed greens, tomato slices, and cornichons if using, then place the top half of the bun to complete the burger.
