- Lean chicken liver - 200 grams
- Shallot - 1 medium, finely chopped
- Garlic - 1 clove, minced
- Fresh thyme - 1 teaspoon, chopped
- Fresh parsley - 1 tablespoon, chopped
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Whole grain burger buns - 2
- Mixed greens (arugula, spinach) - 50 grams
- Tomato - 1 medium, sliced
- Cornichons - 30 grams, sliced (optional)
Steps
- In a skillet, heat olive oil over medium heat. Add the shallot and garlic, sauté until softened, about 3-4 minutes.
- Add the chicken liver to the skillet, season with salt, pepper, thyme, and parsley. Cook until the liver is browned on the outside, about 5-7 minutes.
- Remove the skillet from heat and let it cool slightly. Transfer the mixture to a food processor and blend until smooth. Adjust seasoning if necessary.
- Toast the whole grain burger buns lightly in a toaster or on a skillet.
- Spread a generous amount of the liver pâté on the bottom half of each bun.
- Top with mixed greens, tomato slices, and cornichons if using, then place the top half of the bun to complete the burger.
