  • Walnuts - 120 grams
  • Chickpeas - 100 grams, cooked
  • Oats - 50 grams
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Dijon mustard - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Buns - 2, whole grain
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Avocado - 1, sliced

Steps

  1. In a food processor, combine the walnuts, chickpeas, oats, minced garlic, parsley, Dijon mustard, salt, black pepper, and paprika. Pulse until the mixture is well combined but still textured.
  2. Form the mixture into two burger patties, about 1.5 cm thick.
  3. Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 5-7 minutes on each side until golden brown and heated through.
  4. While the patties are cooking, slice the tomato and avocado, and prepare the buns by toasting them lightly if desired.
  5. Assemble the burgers by placing a lettuce leaf on each bun, adding the cooked walnut patties, topped with slices of tomato and avocado. Finish with the top half of the bun.
  6. Serve immediately with your favorite dipping sauce or side.
