- Walnuts - 120 grams
- Chickpeas - 100 grams, cooked
- Oats - 50 grams
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Dijon mustard - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Buns - 2, whole grain
- Lettuce leaves - 2
- Tomato - 1, sliced
- Avocado - 1, sliced
Steps
- In a food processor, combine the walnuts, chickpeas, oats, minced garlic, parsley, Dijon mustard, salt, black pepper, and paprika. Pulse until the mixture is well combined but still textured.
- Form the mixture into two burger patties, about 1.5 cm thick.
- Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 5-7 minutes on each side until golden brown and heated through.
- While the patties are cooking, slice the tomato and avocado, and prepare the buns by toasting them lightly if desired.
- Assemble the burgers by placing a lettuce leaf on each bun, adding the cooked walnut patties, topped with slices of tomato and avocado. Finish with the top half of the bun.
- Serve immediately with your favorite dipping sauce or side.
