  • Magret de canard (duck breast) - 200 grams
  • Whole grain burger buns - 2

  • Avocado - 1, sliced
  • Red onion - 1/2, thinly sliced
  • Honey mustard - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat a skillet over medium-high heat.
  2. Score the skin of the duck breast in a crosshatch pattern, being careful not to cut into the meat.
  3. Season both sides of the duck breast with salt and black pepper.
  4. Place the duck breast skin-side down in the hot skillet, rendering the fat for about 6-8 minutes until the skin is crispy.
  5. Flip the duck breast and cook for an additional 4-5 minutes until medium-rare or cooked to your desired doneness.
  6. Remove the duck from the skillet and let it rest for 5 minutes before slicing thinly.
  7. While the duck rests, toast the whole grain burger buns in the skillet until golden.
  8. Spread honey mustard on the bottom half of each bun.
  9. Layer arugula, sliced tomatoes, sliced avocado, and red onion on the buns.
  10. Top with the sliced duck breast and place the top half of the buns on each burger.
