- Green lentils - 150 grams
- Red onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, grated
- Fresh parsley - 2 tablespoons, chopped
- Egg - 1 large
- Breadcrumbs - 50 grams
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Burger buns - 2
- Lettuce leaves - 2
- Tomato - 1 medium, sliced
- Avocado - 1/2, sliced
Steps
- Rinse the green lentils under cold water and cook them in a pot with 500 ml of water for about 20 minutes, or until tender. Drain and let cool slightly.
- In a frying pan, heat 1 tablespoon of olive oil over medium heat. Add the chopped red onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.
- In a large bowl, combine the cooked lentils, sautéed onion and garlic, grated carrot, chopped parsley, egg, breadcrumbs, cumin, paprika, salt, and black pepper. Mix until well combined.
- Form the lentil mixture into two patties, each about 1.5 cm thick.
- In the same frying pan, heat the remaining tablespoon of olive oil over medium heat. Cook the lentil patties for about 4-5 minutes on each side, until golden brown and crispy.
- To assemble the burgers, place a lentil patty on each burger bun, and top with lettuce, tomato slices, and avocado. Serve immediately.
