Ingredients

  • Green lentils - 150 grams
  • Red onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, grated
  • Fresh parsley - 2 tablespoons, chopped
  • Egg - 1 large
  • Breadcrumbs - 50 grams
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1 medium, sliced
  • Avocado - 1/2, sliced

Steps

  1. Rinse the green lentils under cold water and cook them in a pot with 500 ml of water for about 20 minutes, or until tender. Drain and let cool slightly.
  2. In a frying pan, heat 1 tablespoon of olive oil over medium heat. Add the chopped red onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.
  3. In a large bowl, combine the cooked lentils, sautéed onion and garlic, grated carrot, chopped parsley, egg, breadcrumbs, cumin, paprika, salt, and black pepper. Mix until well combined.
  4. Form the lentil mixture into two patties, each about 1.5 cm thick.
  5. In the same frying pan, heat the remaining tablespoon of olive oil over medium heat. Cook the lentil patties for about 4-5 minutes on each side, until golden brown and crispy.
  6. To assemble the burgers, place a lentil patty on each burger bun, and top with lettuce, tomato slices, and avocado. Serve immediately.
