- Zucchini - 150 grams, grated
- Cauliflower - 150 grams, grated
- Almond flour - 50 grams
- Egg - 1 large
- Garlic - 1 clove, minced
- Fresh parsley - 2 tablespoons, chopped
- Dried thyme - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for frying)
- Avocado - 1, sliced
- Tomato - 1, sliced
- Romaine lettuce leaves - 4 (for wrapping)
Steps
- In a mixing bowl, combine the grated zucchini, grated cauliflower, almond flour, egg, minced garlic, chopped parsley, dried thyme, salt, and black pepper. Mix until well combined.
- Heat 1 tablespoon of olive oil in a non-stick frying pan over medium heat.
- Form the vegetable mixture into two burger patties and place them in the frying pan. Cook for about 5-7 minutes on each side or until golden brown and cooked through.
- While the patties are cooking, prepare the toppings by slicing the avocado and tomato.
- Once the patties are done, remove them from the pan and let them rest for a minute.
- To assemble the burgers, place one patty on a lettuce leaf, top with avocado and tomato slices, and then wrap the lettuce around the filling. Repeat for the second burger.
