Ingredients

  • Zucchini - 150 grams, grated
  • Cauliflower - 150 grams, grated
  • Almond flour - 50 grams
  • Egg - 1 large
  • Garlic - 1 clove, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Dried thyme - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons (for frying)
  • Avocado - 1, sliced
  • Tomato - 1, sliced
  • Romaine lettuce leaves - 4 (for wrapping)

Steps

  1. In a mixing bowl, combine the grated zucchini, grated cauliflower, almond flour, egg, minced garlic, chopped parsley, dried thyme, salt, and black pepper. Mix until well combined.
  2. Heat 1 tablespoon of olive oil in a non-stick frying pan over medium heat.
  3. Form the vegetable mixture into two burger patties and place them in the frying pan. Cook for about 5-7 minutes on each side or until golden brown and cooked through.
  4. While the patties are cooking, prepare the toppings by slicing the avocado and tomato.
  5. Once the patties are done, remove them from the pan and let them rest for a minute.
  6. To assemble the burgers, place one patty on a lettuce leaf, top with avocado and tomato slices, and then wrap the lettuce around the filling. Repeat for the second burger.
