- Black beans - 200 grams (cooked and drained)
- Oats - 50 grams (rolled)
- Onion - 1 small (finely chopped)
- Garlic - 2 cloves (minced)
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Fresh parsley - 2 tablespoons (chopped)
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Whole grain burger buns - 2
- Lettuce - 2 leaves
- Tomato - 1 (sliced)
- Avocado - 1/2 (sliced)
Steps
- In a large bowl, mash the cooked black beans with a fork until mostly smooth, leaving some chunks for texture.
- Add the rolled oats, chopped onion, minced garlic, cumin, paprika, chopped parsley, olive oil, salt, and black pepper to the mashed beans. Mix until well combined.
- Shape the mixture into two equal-sized patties.
- Heat a non-stick skillet over medium heat and add a little olive oil. Cook the patties for about 5-7 minutes on each side, or until they are golden brown and heated through.
- While the patties are cooking, lightly toast the whole grain burger buns in the same skillet.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the cooked patty, slices of tomato, and avocado. Top with the other half of the bun.
