  • Oats - 50 grams (rolled)
  • Onion - 1 small (finely chopped)
  • Garlic - 2 cloves (minced)
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Fresh parsley - 2 tablespoons (chopped)
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole grain burger buns - 2
  • Lettuce - 2 leaves
  • Tomato - 1 (sliced)
  • Avocado - 1/2 (sliced)

Steps

  1. In a large bowl, mash the cooked black beans with a fork until mostly smooth, leaving some chunks for texture.
  2. Add the rolled oats, chopped onion, minced garlic, cumin, paprika, chopped parsley, olive oil, salt, and black pepper to the mashed beans. Mix until well combined.
  3. Shape the mixture into two equal-sized patties.
  4. Heat a non-stick skillet over medium heat and add a little olive oil. Cook the patties for about 5-7 minutes on each side, or until they are golden brown and heated through.
  5. While the patties are cooking, lightly toast the whole grain burger buns in the same skillet.
  6. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the cooked patty, slices of tomato, and avocado. Top with the other half of the bun.
