Ingredients

  • 200 g mixed seafood (shrimp, scallops, and calamari)
  • 1 small zucchini - grated
  • 50 g breadcrumbs (whole wheat)
  • 1 egg - beaten
  • 1 clove garlic - minced
  • 1 tbsp fresh parsley - chopped
  • 1 tsp lemon juice
  • Salt - to taste
  • Pepper - to taste
  • 2 whole grain burger buns
  • 2 tbsp homemade or store-bought aioli
  • Lettuce leaves - for garnish
  • Tomato - sliced, for garnish

Steps

  1. In a bowl, combine the mixed seafood, grated zucchini, breadcrumbs, beaten egg, minced garlic, chopped parsley, lemon juice, salt, and pepper. Mix until well combined.
  2. Form the mixture into two patties and refrigerate for 10 minutes to help them firm up.
  3. Heat a non-stick skillet over medium heat and add a drizzle of olive oil. Cook the patties for about 4-5 minutes on each side, or until they are golden brown and cooked through.
  4. While the patties are cooking, lightly toast the whole grain burger buns in a separate skillet or in the oven.
  5. Assemble the burgers by spreading a tablespoon of aioli on each bun, adding a lettuce leaf, the seafood patty, and a slice of tomato. Top with the other half of the bun.
