- 200 g mixed seafood (shrimp, scallops, and calamari)
- 1 small zucchini - grated
- 50 g breadcrumbs (whole wheat)
- 1 egg - beaten
- 1 clove garlic - minced
- 1 tbsp fresh parsley - chopped
- 1 tsp lemon juice
- Salt - to taste
- Pepper - to taste
- 2 whole grain burger buns
- 2 tbsp homemade or store-bought aioli
- Lettuce leaves - for garnish
- Tomato - sliced, for garnish
Steps
- In a bowl, combine the mixed seafood, grated zucchini, breadcrumbs, beaten egg, minced garlic, chopped parsley, lemon juice, salt, and pepper. Mix until well combined.
- Form the mixture into two patties and refrigerate for 10 minutes to help them firm up.
- Heat a non-stick skillet over medium heat and add a drizzle of olive oil. Cook the patties for about 4-5 minutes on each side, or until they are golden brown and cooked through.
- While the patties are cooking, lightly toast the whole grain burger buns in a separate skillet or in the oven.
- Assemble the burgers by spreading a tablespoon of aioli on each bun, adding a lettuce leaf, the seafood patty, and a slice of tomato. Top with the other half of the bun.
