Ingredients

  • Chickpeas - 200 grams (cooked and drained)
  • Grated Gruyère cheese - 100 grams
  • Breadcrumbs - 50 grams
  • Egg - 1 large
  • Garlic - 1 clove (minced)
  • Fresh parsley - 2 tablespoons (chopped)
  • Dijon mustard - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Burger buns - 2 (preferably whole grain)
  • Lettuce leaves - 2
  • Tomato - 1 medium (sliced)
  • Red onion - 1 small (thinly sliced)
  • Pickles - 4 slices

Steps

  1. In a mixing bowl, mash the cooked chickpeas with a fork until slightly chunky.
  2. Add the grated Gruyère cheese, breadcrumbs, egg, minced garlic, chopped parsley, Dijon mustard, salt, and black pepper to the bowl. Mix until well combined.
  3. Form the mixture into two patties, about 1.5 cm thick.
  4. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for 4-5 minutes on each side until golden brown and heated through.
  5. While the patties are cooking, toast the burger buns in the same skillet until lightly crispy.
  6. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the cheese patty, sliced tomato, red onion, and pickles. Top with the other half of the bun.
  7. Serve immediately with your favorite sides.
