Ingredients
- Chickpeas - 200 grams (cooked and drained)
- Grated Gruyère cheese - 100 grams
- Breadcrumbs - 50 grams
- Egg - 1 large
- Garlic - 1 clove (minced)
- Fresh parsley - 2 tablespoons (chopped)
- Dijon mustard - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Burger buns - 2 (preferably whole grain)
- Lettuce leaves - 2
- Tomato - 1 medium (sliced)
- Red onion - 1 small (thinly sliced)
- Pickles - 4 slices
Steps
- In a mixing bowl, mash the cooked chickpeas with a fork until slightly chunky.
- Add the grated Gruyère cheese, breadcrumbs, egg, minced garlic, chopped parsley, Dijon mustard, salt, and black pepper to the bowl. Mix until well combined.
- Form the mixture into two patties, about 1.5 cm thick.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for 4-5 minutes on each side until golden brown and heated through.
- While the patties are cooking, toast the burger buns in the same skillet until lightly crispy.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the cheese patty, sliced tomato, red onion, and pickles. Top with the other half of the bun.
- Serve immediately with your favorite sides.
