- Fresh mint - 15 grams (chopped)
- Garlic - 1 clove (minced)
- Egg - 1 large
- Breadcrumbs - 50 grams
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cumin - 1/2 teaspoon
- Burger buns - 2
- Lettuce leaves - 2
- Tomato - 1 medium (sliced)
- Cucumber - 1 small (sliced)
- Plain yogurt - 100 grams
- Lemon juice - 1 tablespoon
Steps
- In a mixing bowl, mash the chickpeas with a fork until mostly smooth.
- Add crumbled feta cheese, chopped parsley, chopped mint, minced garlic, egg, breadcrumbs, salt, black pepper, and cumin to the bowl, mixing until well combined.
- Form the mixture into two equal-sized patties.
- Heat olive oil in a non-stick skillet over medium heat and cook the patties for about 5-6 minutes on each side, or until golden brown.
- While the patties are cooking, mix the plain yogurt with lemon juice in a small bowl to create a quick sauce.
- Toast the burger buns in the same skillet for 1-2 minutes until lightly golden.
- Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by the feta patty, slices of tomato, cucumber, and a generous dollop of yogurt sauce.
- Top with the other half of the bun and serve immediately.
