Ingredients

  • Feta cheese - 200 grams
  • Chickpeas - 200 grams (canned, drained)
  • Fresh parsley - 30 grams (chopped)
  • Fresh mint - 15 grams (chopped)
  • Garlic - 1 clove (minced)
  • Egg - 1 large
  • Breadcrumbs - 50 grams
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cumin - 1/2 teaspoon
  • Burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1 medium (sliced)
  • Cucumber - 1 small (sliced)
  • Plain yogurt - 100 grams
  • Lemon juice - 1 tablespoon

Steps

  1. In a mixing bowl, mash the chickpeas with a fork until mostly smooth.
  2. Add crumbled feta cheese, chopped parsley, chopped mint, minced garlic, egg, breadcrumbs, salt, black pepper, and cumin to the bowl, mixing until well combined.
  3. Form the mixture into two equal-sized patties.
  4. Heat olive oil in a non-stick skillet over medium heat and cook the patties for about 5-6 minutes on each side, or until golden brown.
  5. While the patties are cooking, mix the plain yogurt with lemon juice in a small bowl to create a quick sauce.
  6. Toast the burger buns in the same skillet for 1-2 minutes until lightly golden.
  7. Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by the feta patty, slices of tomato, cucumber, and a generous dollop of yogurt sauce.
  8. Top with the other half of the bun and serve immediately.
