Ingredients

  • Canned white beans - 400 grams, drained and rinsed
  • Rolled oats - 50 grams
  • Garlic - 2 cloves, minced
  • Fresh parsley - 30 grams, chopped
  • Red onion - 50 grams, finely chopped
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole wheat burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Vegan mayo - 2 tablespoons

Steps

  1. In a large bowl, mash the drained white beans using a fork or potato masher until mostly smooth, leaving some chunks for texture.
  2. Add the rolled oats, minced garlic, chopped parsley, finely chopped red onion, 1 tablespoon of olive oil, ground cumin, salt, and black pepper to the mashed beans. Mix until well combined.
  3. Form the mixture into two patties, ensuring they are compact and even in thickness.
  4. Heat the remaining 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until golden brown and heated through.
  5. While the patties are cooking, toast the whole wheat burger buns in a toaster or on a hot skillet until lightly crispy.
  6. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the cooked bean patty, a slice of tomato, and a tablespoon of vegan mayo. Top with the other half of the bun.
  7. Serve immediately with your choice of side.
