- Canned white beans - 400 grams, drained and rinsed
- Rolled oats - 50 grams
- Garlic - 2 cloves, minced
- Fresh parsley - 30 grams, chopped
- Red onion - 50 grams, finely chopped
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Whole wheat burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Vegan mayo - 2 tablespoons
Steps
- In a large bowl, mash the drained white beans using a fork or potato masher until mostly smooth, leaving some chunks for texture.
- Add the rolled oats, minced garlic, chopped parsley, finely chopped red onion, 1 tablespoon of olive oil, ground cumin, salt, and black pepper to the mashed beans. Mix until well combined.
- Form the mixture into two patties, ensuring they are compact and even in thickness.
- Heat the remaining 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until golden brown and heated through.
- While the patties are cooking, toast the whole wheat burger buns in a toaster or on a hot skillet until lightly crispy.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the cooked bean patty, a slice of tomato, and a tablespoon of vegan mayo. Top with the other half of the bun.
- Serve immediately with your choice of side.
