- Shrimp (peeled and deveined) - 300 grams
- Almond flour - 50 grams
- Egg - 1 large
- Garlic (minced) - 1 clove
- Fresh parsley (chopped) - 2 tablespoons
- Chives (chopped) - 1 tablespoon
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Butter - 1 tablespoon
- Large lettuce leaves (for wrapping) - 4 leaves
- Avocado (sliced) - 1/2 medium
- Tomato (sliced) - 1 small
Steps
- In a food processor, combine the shrimp, almond flour, egg, minced garlic, chopped parsley, chives, lemon juice, salt, and black pepper. Pulse until the mixture is well blended but still slightly chunky.
- Form the shrimp mixture into two patties, about 1.5 cm thick.
- Heat olive oil and butter in a non-stick skillet over medium heat. Once hot, add the shrimp patties and cook for about 4-5 minutes on each side, or until golden brown and cooked through.
- While the patties are cooking, prepare the lettuce leaves by washing and drying them. Slice the avocado and tomato.
- Once the patties are cooked, remove them from the skillet and let them rest for a minute.
- Assemble the burgers by placing a shrimp patty inside each lettuce leaf, topping with avocado and tomato slices. Wrap the lettuce around the filling and serve immediately.
