Ingredients

  • Shrimp (peeled and deveined) - 300 grams
  • Almond flour - 50 grams
  • Egg - 1 large
  • Garlic (minced) - 1 clove
  • Fresh parsley (chopped) - 2 tablespoons
  • Chives (chopped) - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Butter - 1 tablespoon
  • Large lettuce leaves (for wrapping) - 4 leaves
  • Avocado (sliced) - 1/2 medium
  • Tomato (sliced) - 1 small

Steps

  1. In a food processor, combine the shrimp, almond flour, egg, minced garlic, chopped parsley, chives, lemon juice, salt, and black pepper. Pulse until the mixture is well blended but still slightly chunky.
  2. Form the shrimp mixture into two patties, about 1.5 cm thick.
  3. Heat olive oil and butter in a non-stick skillet over medium heat. Once hot, add the shrimp patties and cook for about 4-5 minutes on each side, or until golden brown and cooked through.
  4. While the patties are cooking, prepare the lettuce leaves by washing and drying them. Slice the avocado and tomato.
  5. Once the patties are cooked, remove them from the skillet and let them rest for a minute.
  6. Assemble the burgers by placing a shrimp patty inside each lettuce leaf, topping with avocado and tomato slices. Wrap the lettuce around the filling and serve immediately.
