- Zucchini - 200 grams
- Breadcrumbs - 50 grams
- Grated Parmesan cheese - 30 grams
- Egg - 1 large
- Garlic - 1 clove, minced
- Fresh parsley - 2 tablespoons, chopped
- Fresh basil - 1 tablespoon, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for frying)
- Burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Mayonnaise - 2 tablespoons
Steps
- Grate the zucchini and place it in a clean kitchen towel. Squeeze out excess moisture and transfer it to a mixing bowl.
- Add the breadcrumbs, grated Parmesan, egg, minced garlic, chopped parsley, chopped basil, salt, and black pepper to the bowl. Mix until well combined.
- Form the mixture into two patties, about 1.5 cm thick.
- Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and cooked through.
- While the patties are cooking, toast the burger buns lightly.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by a cooked zucchini patty, a slice of tomato, and a tablespoon of mayonnaise. Top with the other half of the bun.
