Ingredients

  • Zucchini - 200 grams
  • Breadcrumbs - 50 grams
  • Grated Parmesan cheese - 30 grams
  • Egg - 1 large
  • Garlic - 1 clove, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh basil - 1 tablespoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons (for frying)
  • Burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Mayonnaise - 2 tablespoons

Steps

  1. Grate the zucchini and place it in a clean kitchen towel. Squeeze out excess moisture and transfer it to a mixing bowl.
  2. Add the breadcrumbs, grated Parmesan, egg, minced garlic, chopped parsley, chopped basil, salt, and black pepper to the bowl. Mix until well combined.
  3. Form the mixture into two patties, about 1.5 cm thick.
  4. Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and cooked through.
  5. While the patties are cooking, toast the burger buns lightly.
  6. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by a cooked zucchini patty, a slice of tomato, and a tablespoon of mayonnaise. Top with the other half of the bun.
