Ingredients
- Portobello mushrooms - 2 large
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh thyme - 1 teaspoon, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Breadcrumbs - 50 grams
- Parmesan cheese - 30 grams, grated
- Egg - 1 large
- Burger buns - 2
- Lettuce leaves - 2
- Tomato - 1 medium, sliced
- Mayonnaise - 2 tablespoons
- Mustard - 1 teaspoon
Steps
- Preheat your oven to 200°C (400°F).
- Clean the portobello mushrooms and remove the stems. In a bowl, mix olive oil, minced garlic, thyme, salt, and pepper. Brush this mixture onto the mushrooms.
- Place the mushrooms on a baking sheet and roast them in the preheated oven for about 15 minutes until tender.
- In a separate bowl, combine breadcrumbs, grated Parmesan cheese, and the egg. Once the mushrooms are done, chop them finely and add to the breadcrumb mixture. Stir until well combined.
- Form the mixture into two patties. Heat a skillet over medium heat and add a little olive oil. Cook each patty for about 4-5 minutes on each side until golden brown.
- Toast the burger buns lightly on the skillet or in the oven.
- Assemble the burgers by spreading mayonnaise on the bottom half of each bun, adding a lettuce leaf, then the mushroom patty, sliced tomato, and a touch of mustard before topping with the other half of the bun.
