Ingredients

  • Portobello mushrooms - 2 large
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Breadcrumbs - 50 grams
  • Parmesan cheese - 30 grams, grated
  • Egg - 1 large
  • Burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1 medium, sliced
  • Mayonnaise - 2 tablespoons
  • Mustard - 1 teaspoon

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Clean the portobello mushrooms and remove the stems. In a bowl, mix olive oil, minced garlic, thyme, salt, and pepper. Brush this mixture onto the mushrooms.
  3. Place the mushrooms on a baking sheet and roast them in the preheated oven for about 15 minutes until tender.
  4. In a separate bowl, combine breadcrumbs, grated Parmesan cheese, and the egg. Once the mushrooms are done, chop them finely and add to the breadcrumb mixture. Stir until well combined.
  5. Form the mixture into two patties. Heat a skillet over medium heat and add a little olive oil. Cook each patty for about 4-5 minutes on each side until golden brown.
  6. Toast the burger buns lightly on the skillet or in the oven.
  7. Assemble the burgers by spreading mayonnaise on the bottom half of each bun, adding a lettuce leaf, then the mushroom patty, sliced tomato, and a touch of mustard before topping with the other half of the bun.
