Ingredients

  • Portobello mushrooms - 2 large
  • Ground beef (80/20) - 300 grams
  • Gruyère cheese - 50 grams, sliced
  • Garlic - 1 clove, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Mustard - 2 teaspoons (for serving)
  • Lettuce leaves - 4 large (for wrapping)

Steps

  1. Preheat the grill or a skillet over medium heat.
  2. Clean the portobello mushrooms and remove the stems. Brush them with 1 tablespoon of olive oil and season with salt and pepper.
  3. In a mixing bowl, combine the ground beef, minced garlic, chopped parsley, salt, and black pepper. Form the mixture into two patties.
  4. Add the mushroom caps to the grill or skillet, gill side down, and cook for about 5 minutes until slightly softened. Flip them over and place a slice of Gruyère cheese on each cap.
  5. At the same time, cook the beef patties on the grill or skillet for about 3-4 minutes on each side for medium doneness.
  6. Once the patties are cooked, place each patty on top of a mushroom cap with melted cheese. Allow them to rest for a minute.
  7. To serve, place the mushroom burgers on large lettuce leaves, add a teaspoon of mustard on top, and wrap them up like a burger.
