Ingredients

  • cooked chestnuts - 200 grams
  • cooked quinoa - 100 grams
  • breadcrumbs - 50 grams
  • grated carrot - 50 grams
  • finely chopped onion - 50 grams
  • garlic - 1 clove, minced
  • fresh parsley - 2 tablespoons, chopped
  • ground cumin - 1 teaspoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • olive oil - 2 tablespoons
  • burger buns - 2
  • sliced tomato - 1
  • sliced cucumber - 1/2
  • leafy greens (e.g., arugula) - 1 cup
  • Greek yogurt - 100 grams
  • lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, mash the cooked chestnuts with a fork until chunky.
  3. Add the cooked quinoa, breadcrumbs, grated carrot, chopped onion, minced garlic, parsley, cumin, salt, and pepper to the bowl.
  4. Mix all the ingredients together until well combined and form into two burger patties.
  5. Heat 1 tablespoon of olive oil in a skillet over medium heat and cook the patties for about 5-7 minutes on each side until golden brown.
  6. While the patties are cooking, prepare the herb sauce by mixing Greek yogurt with lemon juice and a pinch of salt.
  7. Once the patties are done, assemble the burgers by placing each patty on a bun and topping with sliced tomato, cucumber, leafy greens, and a dollop of the herb sauce.
  8. Serve immediately with your favorite sides.
