- cooked chestnuts - 200 grams
- cooked quinoa - 100 grams
- breadcrumbs - 50 grams
- grated carrot - 50 grams
- finely chopped onion - 50 grams
- garlic - 1 clove, minced
- fresh parsley - 2 tablespoons, chopped
- ground cumin - 1 teaspoon
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- olive oil - 2 tablespoons
- burger buns - 2
- sliced tomato - 1
- sliced cucumber - 1/2
- leafy greens (e.g., arugula) - 1 cup
- Greek yogurt - 100 grams
- lemon juice - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, mash the cooked chestnuts with a fork until chunky.
- Add the cooked quinoa, breadcrumbs, grated carrot, chopped onion, minced garlic, parsley, cumin, salt, and pepper to the bowl.
- Mix all the ingredients together until well combined and form into two burger patties.
- Heat 1 tablespoon of olive oil in a skillet over medium heat and cook the patties for about 5-7 minutes on each side until golden brown.
- While the patties are cooking, prepare the herb sauce by mixing Greek yogurt with lemon juice and a pinch of salt.
- Once the patties are done, assemble the burgers by placing each patty on a bun and topping with sliced tomato, cucumber, leafy greens, and a dollop of the herb sauce.
- Serve immediately with your favorite sides.
