- Fresh parsley - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for frying)
- Whole grain burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Vegan mayonnaise - 2 tablespoons
Steps
- In a mixing bowl, combine the grated carrots, chickpea flour, ground oats, minced garlic, chopped parsley, cumin, paprika, salt, and black pepper. Mix until well combined.
- Shape the mixture into two burger patties.
- Heat olive oil in a non-stick skillet over medium heat. Fry the patties for 4-5 minutes on each side until golden brown and crispy.
- While the patties are cooking, toast the whole grain burger buns in a separate pan or toaster.
- Assemble the burgers by spreading vegan mayonnaise on the bottom half of each bun. Place a lettuce leaf and a slice of tomato on top, followed by the carrot burger patty.
- Cover with the top half of the bun and serve immediately.
