- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Avocado - 1/2, sliced
- Yogurt - 2 tablespoons (for sauce)
- Lemon juice - 1 teaspoon (for sauce)
- Salt and pepper - to taste (for sauce)
Steps
- In a large bowl, combine the grated carrots, chopped onion, minced garlic, chickpea flour, cumin powder, paprika, salt, black pepper, and fresh parsley. Mix well until all ingredients are combined.
- Using your hands, form the mixture into two patties.
- In a non-stick skillet, heat 1 tablespoon of olive oil over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and cooked through.
- While the patties are cooking, prepare the sauce by mixing yogurt, lemon juice, and a pinch of salt and pepper in a small bowl.
- Toast the burger buns lightly in the same skillet, if desired.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the carrot patty, slices of tomato, and avocado. Drizzle with the yogurt sauce before topping with the other half of the bun.
