Ingredients

  • Porcini mushrooms - 200 grams, cleaned and chopped
  • Olive oil - 2 tablespoons
  • Shallots - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh thyme - 1 teaspoon, chopped
  • Breadcrumbs - 50 grams
  • Egg - 1 large
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Buns - 2 whole (preferably brioche or whole grain)
  • Cheese (optional) - 2 slices (e.g., goat cheese or aged cheddar)
  • Lettuce - 2 leaves
  • Tomato - 1 medium, sliced
  • Mustard or aioli - to taste

Steps

  1. Heat olive oil in a skillet over medium heat. Add shallots and sauté for about 2 minutes until translucent.
  2. Add minced garlic and chopped porcini mushrooms to the skillet. Cook for 5-7 minutes until mushrooms are soft and moisture has evaporated.
  3. Stir in chopped thyme, salt, and black pepper. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine the mushroom mixture with breadcrumbs and the egg. Mix until well combined and a thick paste forms.
  5. Form the mixture into two patties, about 1.5 cm thick.
  6. Heat a non-stick skillet over medium heat and add a little olive oil. Cook the patties for about 4-5 minutes on each side, until golden brown.
  7. While the patties are cooking, toast the buns lightly in a separate pan or toaster.
  8. Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by the mushroom patty, cheese (if using), and tomato slice. Spread mustard or aioli on the top bun and place it on top.
  9. Serve immediately with your choice of sides.
