Ingredients
- Porcini mushrooms - 200 grams, cleaned and chopped
- Olive oil - 2 tablespoons
- Shallots - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Fresh thyme - 1 teaspoon, chopped
- Breadcrumbs - 50 grams
- Egg - 1 large
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Buns - 2 whole (preferably brioche or whole grain)
- Cheese (optional) - 2 slices (e.g., goat cheese or aged cheddar)
- Lettuce - 2 leaves
- Tomato - 1 medium, sliced
- Mustard or aioli - to taste
Steps
- Heat olive oil in a skillet over medium heat. Add shallots and sauté for about 2 minutes until translucent.
- Add minced garlic and chopped porcini mushrooms to the skillet. Cook for 5-7 minutes until mushrooms are soft and moisture has evaporated.
- Stir in chopped thyme, salt, and black pepper. Remove from heat and let cool slightly.
- In a mixing bowl, combine the mushroom mixture with breadcrumbs and the egg. Mix until well combined and a thick paste forms.
- Form the mixture into two patties, about 1.5 cm thick.
- Heat a non-stick skillet over medium heat and add a little olive oil. Cook the patties for about 4-5 minutes on each side, until golden brown.
- While the patties are cooking, toast the buns lightly in a separate pan or toaster.
- Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by the mushroom patty, cheese (if using), and tomato slice. Spread mustard or aioli on the top bun and place it on top.
- Serve immediately with your choice of sides.
