Ingredients

  • Cooked beets - 200 grams, grated
  • Cooked quinoa - 100 grams
  • Breadcrumbs - 50 grams
  • Goat cheese - 50 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Garlic - 1 clove, minced
  • Egg - 1, beaten
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Burger buns - 2, whole grain
  • Lettuce leaves - 2

Steps

  1. In a mixing bowl, combine the grated cooked beets, cooked quinoa, breadcrumbs, crumbled goat cheese, chopped parsley, minced garlic, beaten egg, salt, and pepper.
  2. Mix the ingredients well until they form a cohesive mixture. If too wet, add a bit more breadcrumbs.
  3. Divide the mixture into two equal portions and shape them into burger patties.
  4. Heat 1 tablespoon of olive oil in a skillet over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side, until golden brown.
  5. While the patties are cooking, toast the burger buns in a separate pan or toaster.
  6. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the beet patty, and then the top half of the bun.
  7. Serve immediately with your favorite sides.
