- Mushrooms - 200 grams, finely chopped
- Cooked quinoa - 100 grams
- Breadcrumbs - 50 grams
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Egg - 1 large
- Fresh parsley - 2 tablespoons, chopped
- Dijon mustard - 1 tablespoon
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Goat cheese - 50 grams, crumbled
- Burger buns - 2, halved
- Lettuce - 2 leaves
- Tomato - 1, sliced
- Pickles - 2 slices
Steps
- In a skillet over medium heat, add 1 tablespoon of olive oil and sauté the chopped onion and minced garlic until translucent.
- Add the finely chopped mushrooms to the skillet and cook until they release moisture and become golden brown, about 5-7 minutes. Remove from heat and let cool slightly.
- In a mixing bowl, combine the cooked quinoa, sautéed mushroom mixture, breadcrumbs, egg, parsley, Dijon mustard, salt, and black pepper. Mix well until combined.
- Form the mixture into two patties (about 100 grams each).
- In the same skillet, add the remaining tablespoon of olive oil and cook the patties over medium heat for 4-5 minutes on each side, or until golden brown and heated through.
- Meanwhile, toast the burger buns lightly on a separate pan or grill.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by a mushroom patty, crumbled goat cheese, tomato slices, and pickles. Top with the other half of the bun.
- Serve immediately with your favorite side.
