Ingredients

  • Mushrooms - 200 grams, finely chopped
  • Cooked quinoa - 100 grams
  • Breadcrumbs - 50 grams
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Egg - 1 large
  • Fresh parsley - 2 tablespoons, chopped
  • Dijon mustard - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Goat cheese - 50 grams, crumbled
  • Burger buns - 2, halved
  • Lettuce - 2 leaves
  • Tomato - 1, sliced
  • Pickles - 2 slices

Steps

  1. In a skillet over medium heat, add 1 tablespoon of olive oil and sauté the chopped onion and minced garlic until translucent.
  2. Add the finely chopped mushrooms to the skillet and cook until they release moisture and become golden brown, about 5-7 minutes. Remove from heat and let cool slightly.
  3. In a mixing bowl, combine the cooked quinoa, sautéed mushroom mixture, breadcrumbs, egg, parsley, Dijon mustard, salt, and black pepper. Mix well until combined.
  4. Form the mixture into two patties (about 100 grams each).
  5. In the same skillet, add the remaining tablespoon of olive oil and cook the patties over medium heat for 4-5 minutes on each side, or until golden brown and heated through.
  6. Meanwhile, toast the burger buns lightly on a separate pan or grill.
  7. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by a mushroom patty, crumbled goat cheese, tomato slices, and pickles. Top with the other half of the bun.
  8. Serve immediately with your favorite side.
