  • Shallots - 1, finely chopped
  • Fresh chives - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. In a medium bowl, whisk together the eggs, heavy cream, salt, and pepper until well combined.
  2. In a non-stick skillet, melt the butter over medium heat. Add the chopped shallots and sauté until translucent, about 2-3 minutes.
  3. Add the fresh crab meat to the skillet and gently fold it into the shallots, cooking for an additional 2 minutes until heated through.
