- Bell pepper - 1 medium, cut into squares
- Zucchini - 1 small, sliced into rounds
- Cherry tomatoes - 10, whole
- Skewers - 4 (if wooden, soaked in water for 30 minutes)
Steps
- Cut the chicken breast into 2.5 cm cubes and place them in a mixing bowl.
- In a separate bowl, combine olive oil, lemon juice, minced garlic, chopped thyme, paprika, salt, and black pepper to create the marinade.
- Pour the marinade over the chicken cubes, ensuring they are well coated. Cover and refrigerate for at least 15 minutes.
- While the chicken marinates, prepare the vegetables by cutting the bell pepper into squares and slicing the zucchini.
- Preheat the grill or barbecue to medium-high heat.
- Thread the marinated chicken, bell pepper, zucchini, and cherry tomatoes onto the skewers, alternating between the chicken and vegetables.
