Ingredients

  • Lamb shoulder, cubed - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Fresh rosemary, chopped - 1 tablespoon
  • Fresh thyme, chopped - 1 tablespoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Lemon juice - 1 tablespoon
  • Bell pepper, cubed - 100 grams
  • Zucchini, sliced - 100 grams

Steps

  1. In a bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, smoked paprika, salt, black pepper, and lemon juice to create the marinade.
  2. Add the cubed lamb shoulder into the marinade, ensuring all pieces are well-coated. Cover and refrigerate for at least 20 minutes to allow flavors to meld.
  3. While the lamb is marinating, prepare the vegetables: cube the bell pepper and slice the zucchini.
  4. Preheat a grill or grill pan over medium-high heat.
  5. Thread the marinated lamb cubes, bell pepper, and zucchini onto skewers, alternating between lamb and vegetables.
  6. Once the grill is hot, place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the lamb is browned and cooked to your desired doneness.
  7. Remove from the grill and let rest for a couple of minutes before serving.
