Ingredients

  • All-purpose flour - 250 grams
  • Almond milk - 100 ml
  • Coconut oil - 50 grams (melted)
  • Maple syrup - 30 grams
  • Active dry yeast - 7 grams
  • Salt - 5 grams
  • Ground flaxseed - 15 grams
  • Water - 45 ml
  • Vanilla extract - 5 ml

Steps

  1. In a small bowl, combine ground flaxseed and water. Let it sit for about 10 minutes until it thickens.
  2. In a separate bowl, warm the almond milk slightly (do not boil) and mix in the active dry yeast and maple syrup. Allow it to sit for 5-10 minutes until frothy.
  3. In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the yeast mixture, melted coconut oil, thickened flaxseed mixture, and vanilla extract.
  4. Mix the ingredients until a dough forms. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  5. Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1-2 hours or until doubled in size.
  6. Once risen, punch down the dough and shape it into a loaf or individual rolls. Place them into a greased loaf pan or on a baking sheet.
  7. Cover the dough again and let it rise for another 30-45 minutes.
  8. Preheat the oven to 180°C (350°F). Bake the brioche for 25-30 minutes or until golden brown and cooked through.
  9. Remove from the oven and let it cool for a few minutes before slicing and serving.
