Ingredients
- All-purpose flour - 250 grams
- Almond milk - 100 ml
- Coconut oil - 50 grams (melted)
- Maple syrup - 30 grams
- Active dry yeast - 7 grams
- Salt - 5 grams
- Ground flaxseed - 15 grams
- Water - 45 ml
- Vanilla extract - 5 ml
Steps
- In a small bowl, combine ground flaxseed and water. Let it sit for about 10 minutes until it thickens.
- In a separate bowl, warm the almond milk slightly (do not boil) and mix in the active dry yeast and maple syrup. Allow it to sit for 5-10 minutes until frothy.
- In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the yeast mixture, melted coconut oil, thickened flaxseed mixture, and vanilla extract.
- Mix the ingredients until a dough forms. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
- Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1-2 hours or until doubled in size.
- Once risen, punch down the dough and shape it into a loaf or individual rolls. Place them into a greased loaf pan or on a baking sheet.
- Cover the dough again and let it rise for another 30-45 minutes.
- Preheat the oven to 180°C (350°F). Bake the brioche for 25-30 minutes or until golden brown and cooked through.
- Remove from the oven and let it cool for a few minutes before slicing and serving.
