Ingredients
- All-purpose flour - 200 grams
- Almond milk - 100 ml
- Coconut oil - 50 grams, melted
- Maple syrup - 30 grams
- Active dry yeast - 7 grams
- Flaxseed meal - 10 grams
- Warm water - 30 ml
- Salt - 5 grams
- Vanilla extract - 5 ml
Steps
- In a small bowl, mix the warm water and flaxseed meal. Let it sit for 10 minutes until it thickens.
- In a large mixing bowl, combine the warm almond milk, melted coconut oil, maple syrup, and activated yeast. Stir well and let it sit for 5 minutes until frothy.
- Add the thickened flaxseed mixture, vanilla extract, salt, and half of the flour to the yeast mixture. Mix until combined.
- Gradually add the remaining flour, kneading the dough for about 10 minutes until it is smooth and elastic.
- Cover the dough with a clean kitchen towel and allow it to rise in a warm place for 1 hour or until doubled in size.
- Preheat the oven to 180°C (350°F).
- Once risen, punch down the dough and shape it into a loaf or small buns. Place them into a greased baking pan.
- Let the shaped dough rise again for about 30 minutes.
- Bake in the preheated oven for 20-25 minutes or until golden brown.
- Remove from the oven and allow to cool slightly before serving.
