Ingredients

  • All-purpose flour - 200 grams
  • Almond milk - 100 ml
  • Coconut oil - 50 grams, melted
  • Maple syrup - 30 grams
  • Active dry yeast - 7 grams
  • Flaxseed meal - 10 grams
  • Warm water - 30 ml
  • Salt - 5 grams
  • Vanilla extract - 5 ml

Steps

  1. In a small bowl, mix the warm water and flaxseed meal. Let it sit for 10 minutes until it thickens.
  2. In a large mixing bowl, combine the warm almond milk, melted coconut oil, maple syrup, and activated yeast. Stir well and let it sit for 5 minutes until frothy.
  3. Add the thickened flaxseed mixture, vanilla extract, salt, and half of the flour to the yeast mixture. Mix until combined.
  4. Gradually add the remaining flour, kneading the dough for about 10 minutes until it is smooth and elastic.
  5. Cover the dough with a clean kitchen towel and allow it to rise in a warm place for 1 hour or until doubled in size.
  6. Preheat the oven to 180°C (350°F).
  7. Once risen, punch down the dough and shape it into a loaf or small buns. Place them into a greased baking pan.
  8. Let the shaped dough rise again for about 30 minutes.
  9. Bake in the preheated oven for 20-25 minutes or until golden brown.
  10. Remove from the oven and allow to cool slightly before serving.
