Ingredients

  • All-purpose flour - 250 grams
  • Almond milk - 120 ml
  • Coconut oil - 60 grams, melted
  • Maple syrup - 30 grams
  • Active dry yeast - 7 grams
  • Ground flaxseed - 15 grams
  • Warm water - 45 ml
  • Salt - 5 grams
  • Nutmeg - 1/4 teaspoon
  • Vanilla extract - 1 teaspoon

Steps

  1. In a small bowl, combine warm water and ground flaxseed. Stir and let it sit for about 10 minutes to create a flax egg.
  2. In a large mixing bowl, whisk together the flour, salt, and nutmeg.
  3. In a separate bowl, combine the almond milk, melted coconut oil, maple syrup, and vanilla extract. Mix well.
  4. Sprinkle the yeast over the almond milk mixture and let it sit for about 5 minutes until frothy.
  5. Add the flax egg to the yeast mixture and stir to combine.
  6. Pour the wet ingredients into the dry ingredients and mix until a dough forms.
  7. Knead the dough on a lightly floured surface for about 8-10 minutes until smooth and elastic.
  8. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
  9. Preheat your oven to 180°C (350°F).
  10. Once the dough has risen, punch it down and shape it into a loaf or individual rolls.
  11. Place the shaped dough onto a lined baking tray and let it rise again for 30 minutes.
  12. Bake in the preheated oven for about 25-30 minutes, or until golden brown and hollow-sounding when tapped.
  13. Allow to cool for a few minutes before slicing and serving.
