Ingredients

  • All-purpose flour - 250 grams
  • Instant yeast - 7 grams
  • Sugar - 50 grams
  • Salt - 5 grams
  • Almond milk - 120 ml
  • Coconut oil (melted) - 60 ml
  • Aquafaba (chickpea brine) - 40 ml
  • Vanilla extract - 1 teaspoon
  • Powdered sugar (for dusting) - optional

Steps

  1. In a large mixing bowl, combine the flour, instant yeast, sugar, and salt.
  2. In a separate bowl, mix the almond milk, melted coconut oil, aquafaba, and vanilla extract until well combined.
  3. Pour the wet ingredients into the dry ingredients and mix until a dough forms.
  4. Knead the dough on a lightly floured surface for about 10 minutes until it is smooth and elastic.
  5. Place the dough in a lightly greased bowl, cover it with a clean cloth, and let it rise in a warm place for about 1 to 1.5 hours, or until doubled in size.
  6. Once risen, punch down the dough and divide it into 4 equal pieces for the main body and 4 smaller pieces for the heads.
  7. Shape the larger pieces into smooth balls and place them in greased brioche molds or muffin tins.
  8. Shape the smaller pieces into smaller balls and place them on top of the larger balls in the molds.
  9. Cover the molds with a cloth and let rise again for about 30-45 minutes, until puffy.
  10. Preheat your oven to 180°C (350°F).
  11. Bake the brioche for 20-25 minutes, or until golden brown on top and cooked through.
  12. Let the brioche cool slightly before removing from molds, then dust with powdered sugar if desired.
