- All-purpose flour - 250 grams
- Instant yeast - 7 grams
- Sugar - 50 grams
- Salt - 5 grams
- Almond milk - 120 ml
- Coconut oil (melted) - 60 ml
- Aquafaba (chickpea brine) - 40 ml
- Vanilla extract - 1 teaspoon
- Powdered sugar (for dusting) - optional
Steps
- In a large mixing bowl, combine the flour, instant yeast, sugar, and salt.
- In a separate bowl, mix the almond milk, melted coconut oil, aquafaba, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and mix until a dough forms.
- Knead the dough on a lightly floured surface for about 10 minutes until it is smooth and elastic.
- Place the dough in a lightly greased bowl, cover it with a clean cloth, and let it rise in a warm place for about 1 to 1.5 hours, or until doubled in size.
- Once risen, punch down the dough and divide it into 4 equal pieces for the main body and 4 smaller pieces for the heads.
- Shape the larger pieces into smooth balls and place them in greased brioche molds or muffin tins.
- Shape the smaller pieces into smaller balls and place them on top of the larger balls in the molds.
- Cover the molds with a cloth and let rise again for about 30-45 minutes, until puffy.
- Preheat your oven to 180°C (350°F).
- Bake the brioche for 20-25 minutes, or until golden brown on top and cooked through.
- Let the brioche cool slightly before removing from molds, then dust with powdered sugar if desired.
