Ingredients

  • all-purpose flour - 250 grams
  • active dry yeast - 7 grams
  • milk - 125 ml, warm
  • unsalted butter - 50 grams, softened
  • sugar - 30 grams
  • salt - 5 grams
  • eggs - 2 large, at room temperature
  • vanilla extract - 1 teaspoon

Steps

  1. In a small bowl, dissolve the active dry yeast in warm milk and let it sit for about 5-10 minutes until frothy.
  2. In a large mixing bowl, combine the flour, sugar, and salt, mixing well.
  3. Create a well in the center of the dry ingredients and add the yeast mixture, eggs, softened butter, and vanilla extract.
  4. Mix the ingredients until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth and elastic.
  5. Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
  6. Once risen, punch down the dough and divide it into 6 equal pieces. Shape each piece into a ball.
  7. Place 3 balls into each of two greased loaf pans (or one larger pan), ensuring they are snug but not overcrowded.
  8. Cover the pans again with a damp cloth and let the dough rise for another 30-40 minutes until puffy.
  9. Preheat the oven to 180°C (350°F).
  10. Bake the brioche for 25-30 minutes or until golden brown and the internal temperature reaches 90°C (194°F).
  11. Remove from the oven and let cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
