Ingredients

  • Bread flour - 250 grams
  • Instant yeast - 5 grams
  • Sugar - 30 grams
  • Salt - 5 grams
  • Almond milk - 100 ml
  • Vegetable oil - 40 ml
  • Aquafaba (chickpea brine) - 30 ml
  • Vanilla extract - 1 teaspoon

Steps

  1. In a large mixing bowl, combine the bread flour, instant yeast, sugar, and salt.
  2. In a separate bowl, mix the almond milk, vegetable oil, aquafaba, and vanilla extract until well combined.
  3. Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
  4. Knead the dough for about 10 minutes on a floured surface until it is smooth and elastic.
  5. Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise for 1 hour or until doubled in size.
  6. After the dough has risen, punch it down and divide it into 6 equal pieces.
  7. Shape each piece into a ball and place them in a greased loaf pan, arranging them in two rows of three.
  8. Cover the pan with a cloth and let it rise again for about 30 minutes.
  9. Preheat the oven to 180°C (350°F).
  10. Bake the brioche for 25-30 minutes or until golden brown on top.
  11. Remove from the oven and cool slightly before serving.
