- Bread flour - 250 grams
- Instant yeast - 5 grams
- Sugar - 30 grams
- Salt - 5 grams
- Almond milk - 100 ml
- Vegetable oil - 40 ml
- Aquafaba (chickpea brine) - 30 ml
- Vanilla extract - 1 teaspoon
Steps
- In a large mixing bowl, combine the bread flour, instant yeast, sugar, and salt.
- In a separate bowl, mix the almond milk, vegetable oil, aquafaba, and vanilla extract until well combined.
- Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
- Knead the dough for about 10 minutes on a floured surface until it is smooth and elastic.
- Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise for 1 hour or until doubled in size.
- After the dough has risen, punch it down and divide it into 6 equal pieces.
- Shape each piece into a ball and place them in a greased loaf pan, arranging them in two rows of three.
- Cover the pan with a cloth and let it rise again for about 30 minutes.
- Preheat the oven to 180°C (350°F).
- Bake the brioche for 25-30 minutes or until golden brown on top.
- Remove from the oven and cool slightly before serving.
