Brioche Buns

Ingredients
- all-purpose flour - 250 grams
- active dry yeast - 7 grams
- granulated sugar - 30 grams
- salt - 5 grams
- large eggs - 2
- whole milk - 60 ml
- unsalted butter - 60 grams, softened
- water - 30 ml
- sesame seeds - for topping (optional)
Steps
- In a small bowl, combine warm water (30 ml) and yeast (7 grams). Let it sit for 5-10 minutes until frothy.
- In a large mixing bowl, whisk together the all-purpose flour (250 grams), sugar (30 grams), and salt (5 grams).
- In another bowl, beat the eggs (2) and add the warm milk (60 ml) and the frothy yeast mixture.
- Pour the wet ingredients into the dry ingredients and mix until a dough forms.
- Add the softened butter (60 grams) and knead the dough on a floured surface for about 10 minutes until smooth and elastic.
- Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
- Once risen, punch down the dough and divide it into 4 equal pieces. Shape each piece into a ball and place them on a baking tray lined with parchment paper.
- Cover the shaped buns with a cloth and let them rise for another 30-45 minutes until puffy.
- Preheat the oven to 180°C (350°F).
- Optional: Brush the tops of the buns with beaten egg and sprinkle sesame seeds on top for added flavor and texture.
- Bake the buns in the preheated oven for 15-20 minutes or until golden brown.
- Remove from the oven and let cool slightly before serving.
