  • whole wheat flour - 150 grams
  • all-purpose flour - 50 grams
  • active dry yeast - 7 grams
  • honey - 30 grams
  • milk (warm) - 100 ml
  • unsalted butter (melted) - 30 grams
  • eggs - 1 large
  • vanilla extract - 5 ml
  • salt - 3 grams

Steps

  1. In a small bowl, combine the warm milk, honey, and active dry yeast. Let it sit for about 10 minutes until frothy.
  2. In a large mixing bowl, whisk together the whole wheat flour, all-purpose flour, and salt.
  3. Add the frothy yeast mixture, melted butter, egg, and vanilla extract to the flour mixture. Stir until a dough forms.
  4. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  5. Place the dough in a lightly greased bowl, cover with a clean cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
  6. Preheat the oven to 180°C (350°F).
  7. Once risen, punch down the dough and shape it into a loaf or individual rolls.
  8. Place the shaped dough in a greased baking pan or on a baking sheet lined with parchment paper.
  9. Let it rise again for about 30 minutes, then bake for 20-25 minutes or until golden brown.
  10. Allow the brioche to cool slightly before slicing and serving.
