- Almond flour - 50 grams
- Egg - 1 large
- Garlic, minced - 1 clove
- Fresh parsley, chopped - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Butter lettuce leaves - 4 large
- Sliced avocado - 1 small
- Tomato, sliced - 1 medium
- Red onion, thinly sliced - 1/4 medium
Steps
- In a food processor, combine the cod, shrimp, almond flour, egg, minced garlic, parsley, lemon juice, salt, and black pepper. Pulse until the mixture is well combined but still has some texture.
- Form the mixture into two patties and refrigerate for about 10 minutes to firm up.
- Heat olive oil in a skillet over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side, or until golden brown and cooked through.
