- Chicken breast - 300 grams
- Egg - 1 large
- Breadcrumbs - 50 grams
- Garlic - 1 clove, minced
- Dijon mustard - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fromage blanc - 100 grams
- Fresh chives - 2 tablespoons, chopped
- Brioche buns - 2
- Arugula - 50 grams
- Tomato - 1 medium, sliced
- Olive oil - 1 tablespoon
Steps
- Preheat the grill or stovetop pan over medium heat.
- In a mixing bowl, combine the ground chicken, egg, breadcrumbs, minced garlic, Dijon mustard, salt, and black pepper. Mix until fully combined.
- Form the mixture into two equal-sized patties.
- Drizzle olive oil on the grill or pan and cook the patties for about 5-7 minutes on each side, or until they are fully cooked and have an internal temperature of 75°C.
- While the patties are cooking, mix the fromage blanc with chopped chives in a small bowl for the sauce.
- Toast the brioche buns on the grill or pan for about 1-2 minutes until golden brown.
- Assemble the burgers by spreading the chive fromage blanc on the bottom half of each bun, placing the cooked chicken patty on top, and adding arugula and tomato slices.
- Finish with the top half of the bun and serve with your favorite side.
