Ingredients

  • Chicken breast - 300 grams
  • Egg - 1 large
  • Breadcrumbs - 50 grams
  • Garlic - 1 clove, minced
  • Dijon mustard - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fromage blanc - 100 grams
  • Fresh chives - 2 tablespoons, chopped
  • Brioche buns - 2
  • Arugula - 50 grams
  • Tomato - 1 medium, sliced
  • Olive oil - 1 tablespoon

Steps

  1. Preheat the grill or stovetop pan over medium heat.
  2. In a mixing bowl, combine the ground chicken, egg, breadcrumbs, minced garlic, Dijon mustard, salt, and black pepper. Mix until fully combined.
  3. Form the mixture into two equal-sized patties.
  4. Drizzle olive oil on the grill or pan and cook the patties for about 5-7 minutes on each side, or until they are fully cooked and have an internal temperature of 75°C.
  5. While the patties are cooking, mix the fromage blanc with chopped chives in a small bowl for the sauce.
  6. Toast the brioche buns on the grill or pan for about 1-2 minutes until golden brown.
  7. Assemble the burgers by spreading the chive fromage blanc on the bottom half of each bun, placing the cooked chicken patty on top, and adding arugula and tomato slices.
  8. Finish with the top half of the bun and serve with your favorite side.
