- salt cod - 200 grams
- olive oil - 60 ml
- garlic - 2 cloves, minced
- heavy cream - 100 ml
- cauliflower - 200 grams, chopped
- black pepper - to taste
- fresh parsley - 1 tablespoon, chopped
Steps
- Soak the salt cod in cold water for 24 hours, changing the water 2-3 times to remove excess salt.
- After soaking, drain and rinse the cod, then place it in a pot of fresh water and bring to a boil. Simmer for about 10 minutes until cooked through.
- Remove the cod from the pot, let it cool slightly, then flake it into small pieces, removing any bones.
- In a separate pot, steam or boil the chopped cauliflower until tender, about 10 minutes. Drain well.
- In a large bowl, combine the flaked cod, steamed cauliflower, minced garlic, heavy cream, and olive oil. Mash together until smooth and creamy.
- Season with black pepper to taste and mix in the chopped parsley.
- Serve warm, garnished with additional parsley if desired.
